Acar Kuning
This yellow vegetables pickles or acar kuning is usually eaten as a side dish with yellow rice (nasi kuning) or plain rice (nasi putih). It’s very fresh! Here’s how to make it.

Ingredients
– 2 medium cucumbers, peeled, seeded and cut matchsticks
– 1 carrot, peeled and cut in matchsticks
– 2 bird’s-eye chillies (Indonesian cabe rawit), sliced
– sugar and salt for taste
– 3 tablespoons vinegar
– 1 cup water
– 1 tablespoon oil
Spice Paste
– 5 Candlenuts (Kemiri)
– 1 teaspoon turmeric powder
– 5 shallots
– 2 cloves of garlic
Directions
1. Heat 1 tablespoon of oil, fry the spice paste. Add sugar, salt and vinegar.
2. Put the carrot, cucumber and chillies inside, add 1 cup of water. Mix together and cook until vegetables tender. But don’t overcook!
