Telur Balado
The word ‘balado’ is mostly found in Padang specialities which refer to spicy dishes. What I like about this dish is simple to make, tasty and yet you can make with different kind of meat (chicken or beef), seafood (fish, prawn, squid), tempe, tahu/tofu, vegetables (ex. eggplant) or egg. This time I made with eggs, which the menu is called telur balado.

Serving for 4 – 5 people
INGREDIENTS
– 5 chicken eggs
Spice Paste
– 10 red chillies (or less, depend on your taste)
– 6 shallots
– 4 cloves of garlic
– 1 teaspoon tamarind
– Salt and sugar to taste
DIRECTIONS
1. Boil the eggs, peeled, fried and set aside
2. Grind or blend the spice paste, then sauté it until fragrance. Add the tamarind and a little of water.
3. Add the eggs, mix with the sauce and continue cooking for couple of minutes.
