Ayam Kuluyuk
This recipe actually is not originally from Indonesia, but Chinese. Therefore since a lot of Chinese community is living in Indonesia, they brought some influence especially in food. And you can easily find Chinese food sellers across the country. This Ayam Kuluyuk is one of the famous Chinese foods in Indonesia. It has combination taste of sweet and sour. The original recipe is probably without red chillies, but since Indonesians love spicy food, they add chillies to complete the taste to be sweet, sour and spicy.

Servings for 4 people
INGREDIENTS
– 400 g Chicken fillet thinly cut
– 1/2 teaspoon salt
– 1/2 teaspoon pepper
– 2 cloves of garlic, thinly crushed
– 1 tablespoon fish sauce
– 50 g tapioca flour
– 1 egg
For Sauce
– 4 cloves of garlic, crushed
– 1 onion cut in big pieces
– 4 tablespoons tomato sauce
– 1 tablespoon fish sauce
– 3 big red chillies or 1 medium red paprika
– 150 ml water
– salt to taste
– sugar to taste
– pepper to taste
– A little of vinegar to adjust the taste
– 2 teaspoons of corn flour or tapioca flour mix with 3 tablespoons of water
DIRECTIONS
1. Mix: The chickens with garlic, salt, pepper, fish sauce, and egg, and then leave it for 30 minutes.
2. Coat the chicken with tapioca flour, and then fry with deep fry pan. Set aside
3. Heat up a pan, give 2 tablespoons of vegetable oil, then sauté onion and garlic until fragrant. Add the paprika, continue stirring for a while. Then add the water, fish sauce, tomato sauce, salt, sugar, and pepper. Continue cooking for a while then give the vinegar and corn flour/tapioca flour. Continue cooking for 3 minutes then add the chicken.
Ready to serve!
Note : If you don’t have tapioca or corn flour, you can substitute with plain flour.
If you don’t like to fry the chicken with lot of oil, you can trick it by frying one or two slices chicken fillet using small amount of oil but you have to cut it thinly so that the meat will cook perfectly.
